MaryE's blog: 2021 #22 Making sauerkraut again

Cabbage was on sale because of St. Patrick's Day, so I bought enough to fill the fermenting crock again. It takes about 11 pounds shredded to fill the crock to the point where it is difficult to get the weights into the crock on top of the shredded cabbage. I use a few of the outer leaves to hold the shredded cabbage under the liquid. Some of the juice from the last batch was poured in, then enough cooled, salted water to cover the weights by a couple of inches, and the cover goes on and the moat is filled to about half way up. Daily fluctuations in temperature cause that level to change and I have learned not to put too much in it. In a few days we will be hearing the "bloop" of escaping bubbles and all I need to do for the next 6 weeks is keep some water in the moat. It should be finished about May 1. In the meantime, no peeking! When I open the crock in a few weeks it should look just like it did today. Fermented foods are good for the digestive system, adding probiotics. And besides, we like it!

Today was another nice day. I checked for progress on sprouting or visibly growing plants, watered a few things in the greenhouse. I could have cut old stems in the perennial bed but I didn't. The wind came up about mid morning and our high temperature was in the upper 50's. I looked for box elder bugs where I sprayed so many yesterday afternoon. Didn't find many but I might have waited too late in the day to look.

My horse comes to the gate for his treat and then goes right back into the pasture to eat fresh grass. I can't blame him for ignoring the hay in his feeder. It's good quality grass hay but he has been eating it all winter and the fresh grass is so much tastier! He's apparently getting enough grass to supply his needs and it keeps him busy moving around.

Wrens, finches and sparrows have started gathering nesting materials. We have more red winged blackbirds than we had about 2 weeks ago. It's still too early for hummingbirds. They show up when the tulips start to bloom and the lilacs are just showing a bit of purple to go with their new leaves. We are at the point now where daffodils in sunny spots are beginning to develop stalks with buds forming, just far enough along to look a bit yellow instead of all green. Daffodils will be blooming for a couple of weeks before we see the first tulip opening.
