Rebecca's Salsa

These Garden Salsa peppers are starting to ripen quickly, just waiting for salsa.


  • 5 cups tomatoes, chopped
  • 1 cup white onion, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1/2 bunch fresh cilantro, stems removed, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons red wine vinegar
  • 2 tablespoons light olive oil
  • 1/2 teaspoon salt
  • 1/8 cup sugar
  • 1 or 2 jalapeno peppers, chopped fine

Place tomatoes, onion, peppers (except jalapeno), cilantro, and garlic into bowl and mix. Drizzle vinegar and oil and toss lightly until coated. Sprinkle with salt and sugar and mix well. Add jalapeno (a little at a time) and taste. For more heat, add more jalapeno.
