growing wider than tall...can it be prune to emcourage height?

Colorado blue spruce is a naturally cone-shaped variety so pruning won't really change its shape for any length of time - it will regrow and assume the cone shape again. If you decide to prune, you can either prune out entire branches in the winter months or you can prune off half of the fresh growth on each candle (i.e., growing tip) in the spring. Left unpruned your blue spruce will eventually reach a height of 30'-60' and spread out 10'-20'.
