We grow Rosemary to use in cooking. Should we pinch off the flowers or leave them alone?

Unlike most other herbs where you'd want to keep them from flowering, it won't matter with rosemary whether or not it flowers. Flowering won't stop it from growing. You can simply pick off the flowers after you've cut the rosemary stems to use in cooking. Although they're edible, they turn a brown color when they're heated and they don't look very appetizing. I simply pick them off the stem before stripping the leaves for cooking. Enjoy your rosemary.
