This is my second year planting a veggie garden I expanded it this year and put watermelon and pumpkins in it should I stake them as they get taller or should I let the vines grow on the ground until the produce the fruit.

Melons and squash are perfectly happy sprawling on the ground. They're not too fond of growing up trellises. They will grow up a trellis but when they begin to set fruit you'll need to support that fruit as is matures. Both melons and pumpkins can get quite heavy so you'd need a really strong trellis and you'd need to make a cloth sling to support the developing fruits. I think I'd just allow the vines to sprawl on the ground. Hope you have a great harvest!
