Freeze Whole Tomatoes

Have a bumper crop of tomatoes, but no time to deal with them right away? Freeze for later!

Try washing, coring, and freezing your whole tomatoes on wax-paper lined baking sheets. Transfer to freezer bags after frozen solid. You can use them in recipes, or save them to do your canning later, when the extra heat in the kitchen is more welcome. They are exceptionally easy to peel this way: just drop the frozen tomato into warm water, and the skins slip right off.
