When the garlic plant, rocambole, grows and develops a flowerhead, and seeds emerge within the head of the flower, is it ok to plant them and will they grow edible garlic?

In my experience garlic is always started from held-over or purchased cloves; this ensures faster production of good quality heads of the exact same variety you planted. If you have space to spare and would like to experiment, you could always plant the seeds and see what happens.
