If different types of tomato plants are grown in close proximity such as beefsteak and plum varieties, would cross pollination result in the fruit being a mixture of the two ?

In a word, no. This year's tomatoes will not be affected, but the result would be seen in plants grown from seeds saved from them. So you can go ahead and plant all kinds together unless you are planning on saving seed.
