I am curious about the differences between onion sets and onion plants, insofar as the final product at harvest. My Grandmother always planted both, but I can't recall why!

Onion sets are immature onion bulbs. They have the advantage of being easy to plant and they mature quickly. But a vast minority of onion varieties are available in set form. You grandmother probably had favorite onions that were only available as seed, or seedlings. Mystery solved!
