I have a rock garden in the back of our house, in full sun. If I put a trellis up and plant a clematis, would it grow?

The site you describe would not be the best place for Clematis, because it likes cool, moist roots and full sun on the tops. You might try Wisteria, Podranea ricasoliana (Pink Trumpet Vine) or Morning Glory on a trellis in your sunny rock garden instead. These plants tolerate arid conditions and will perform well in the area you describe.
