I thought it would be easy to find crabapple varieties recommended for their fruit, but it's not! Edible Landscaping (PO Box 77, Afton, VA 22920, 800/5244156, http://www.eat-it.com) recommends 'Centennial' ornamental apple, which is described as "an abrosia of flavors...not the sour crab apples of front yards past!" Fruits do have a hint of crab apple flavor. It's disease resistant, too.

St. Lawrence Nurseries (325 State Hwy 345, Potsdam, NY 13676, ph# 315-265-6739, http://www.sln.potsdam.ny.us) carries a wide variety of crabapples, too.
Hope this is what you're looking for!
