Jerusalem Artichoke, or Sunchoke, is a perennial sunflower grown for its potato-like tubers. The tubers, or chokes, are harvested in late summer and stored like potatoes. You can purchase tubers from Johnny's Selected Seeds, 1 Foss Hill Rd., RR 1, Box 2580, Albion, ME 04910-9731. (Due to the late harvest time, the tubers won't be available for shipping until October.)
