Bolting Bok Choy - Knowledgebase Question

I know that lettuce and spinach leaves become very bitter after they begin to produce flowers; is this true of bok choy as well?

I love bok choy! After bolting, I find that it's not necessarily bitter, but it doesn't taste "quite right" to my taste buds anyway. Also, it's texture becomes harder. However, the lovely yellow flowers are edible, and look pretty in salads. If it's not a hybrid, you can let it go to seed and you'll probably have "volunteer" bok choy plants next year!
