How do you prevent rhubarb from seeding out so early? Can it harm the plants if it does this?

The seed stalks that develop from rhubarb crowns should be removed before they bloom. It's best to remove them as soon as possible or the plant's energy will be directed into seed production instead of thick leaf stalks. Warm spring weather will hasten development of flowering stalks, so there's not much you can do to prevent them.
