The Q&A Archives: Recipe for Garden "V-8" Juice

Question: I raise a lot of tomatoes, and would like to make a V-8 type juice. Do you have a recipe?

Answer: I honestly don't know exactly what is in V-8 juice. But you might try making a simple (uncooked) gazpacho soup, then blending it. Here's a starting point; vary it as you like:

1 cucumber, peeled, seeded, and cubed
1 green pepper, seeded and cubed
1 red pepper, seeded and cubed
1 large rib celery, cut in pieces
1 carrot, cut in pieces
6 tomatoes, peeled and seeded

(onion, red-wine vinegar, oregano, salt, pepper, hot sauce to taste.)

I'd whir this all in a blender at high speed; you may need to run it through a sieve if it doesn't completely liquify. Hope this works for you!
