What should be done about large flowering stalks on my rhubarb?

It's normal for rhubarb plants to form flower stalks. Simply cut these stalks off as they appear, so the plant can direct its energy to leaf and root growth. You can begin light harvests the second and third years after planting your rhubarb; after that, harvest as you like.
