When should I plant Burdock and when to harvest?

Edible Burdock, or Arctium lappa, is a stout herb, growing to about 10' in height with 20" leaves. If you sow seeds in May, you should be able to harvest the edible roots in autumn. The slender roots should be harvested when they are less than two feet long.
