I read in "Joy of Cooking" that Amaranth leaves are considered an edible green. Does this include your heirloom Love Lies Bleeding?

Amaranthus is a coarse plant with colorful foliage which is often picked when young and tender and cooked like spinach. Love-Lies-Bleeding is Amaranthus caudatus. The leaves are edible, and it's also one of the Amaranths that produce grain.
