I bought some sweet potato plants at a gardening center, all they could tell me is that they are "pink". Would you know the name of the type that produces a pink sweet potato?

I think you've purchased Ipomoea Batatas 'Pink Frost' (Variegated Sweet Potato Vine). It's a tender perennial that's often cultivated as an annual. This is a true sweet potato with very ornamental leaves of pink, cream, and green and it's usually grown for the attractive foliage, not for the tubers it produces. Plant yours in full sun to partial shade.
