For the past 2 years I have purchased Oriental Vegetable Pea - dwarf gray sugar - thinking they would be like the picture on the envelope - flat and tender. Instead they are not suitable for stirfrying and are tough. What is the KIND of pea I should purchase to get the flat, large, pod for stirfry?

Sugar pod peas, such as Oriental Vegetable Pea, produce broad pods with mild flavor. If you want a flat pod, try Snowbird or Oregon Giant snow peas. The pea pods on both these varieties remain sweet and tender longer than others. It's important to harvest peas often. Overmature pea pods become tough and tasteless, regardless of the variety.
