The Q&A Archives: Harvesting Cucumbers

Question: We have cucumbers in our garden that are becoming quite large (6-8 inches long, 1-2 inches diameter). How can you tell when they should be harvested?

Answer: Cucumbers taste best when they are mid-sized. For pickling cukes, harvest when 4"-5" long. Harvest slicing cukes when they reach 6"-8". If allowed to grow larger they will develop tough seeds. If you keep your cucumbers harvested, the plants will produce more fruits.
