How do you tell when to cut celery?

An average time frame for celery would be about 80 to 120 days from transplanting depending on the variety you are growing; you could harvest when the stalks are about six inches tall as a rule of thumb, but in any case you will want to harvest it before it goes to into flower or gets yellow and pithy.
