The rule of thumb is to allow winter squash to ripen fully on the vine. Their skin should be hard--difficult to puncture with your fingernail. They can withstand an early cold snap, but should be brought in before a hard freeze, which can damage skin. When you harvest, leave a few inches of the vine attached. |
