Do chile peppers have to be completely red in color before harvesting, or will they ripen off the vine. After harvest, what is the best method of storing the peppers until use.

Peppers can be harvested anytime after they're reached mature size. Generally, green chile peppers are not quite as hot in taste as fully ripened red peppers. The peppers will not continue to ripen after they've been harvested, but they can be stored for about a week in the refrigerator without losing quality. Or, you can pickle green or red peppers, or dry red peppers for future use. Dry only the really ripe peppers.
