What parts (if any) of raw potatoes are poisonous to humans if eaten?

Potatoes are members of the nightshade family, so I wouldn't eat the foliage or flowers, but the tubers themselves are safe to eat. If the skin of a potato is exposed to light it will turn green. This green color indicates that the chemical called solanine. It can be toxic if eaten in large quantities, but it's also bitter tasting, which will keep you from eating a lot of it! If there's a greenish cast to part of a potato, cut it away. The rest of the potato will be safe to eat.
