| A 5-gallon container is large enough for potatoes. Let me give you an idea for an unusual way to grow them, if you can place the container onto a soil surface. Cut a few holes in the bottom of the container for drainage. Fill the container about 1/3 full with growing mix and plant the seed piece, covering it about 2 inches deep. Water it in well. When the seed piece sprouts and begins to grow, keep filling the 5-gallon bucket with compost or growing mix. Always leave about 1/2 of the shoot above the level of added soil. Keep doing this until the bucket is full to within a few inches of the top. Potatoes form above the seed piece, so when it is time to harvest you simply dump over the bucket and your potatoes are right there in the loose compost or growing mix.
