How do you keep seeds from this year's crops for next year's planning (i.e. peppers)?

To save pepper seeds, identify a premium pepper and allow it to ripen on the plant for so long that it turns color and shrivels. Then remove the seeds, dry them thoroughly and store them for next spring. Keep in mind however that hybrid peppers may not come true from seed. Good luck with your project!
