When canning tomatoes or making bread and butter pickles, once in a while I have a jar that doesn't seal. What causes this?

Probably the most common reason the vacuum fails when using modern jars and closures is slightly bent or warped caps. You should always use a brand new flat lid and only reuse bands that are in good condition. For more detailed and thorough information about the most up to date recommended canning procedures (there have been many changes in the past few years!) you might consult with your County Extension (773-5550), or consult the Ball Blue Book Guide to Home Canning, Freezing and Dehydration (often sold alongside canning supplies), or consult the USDA's Canning Drying and Freezing national food safety information at http://www.foodsafety.org/pres... Enjoy!
