Broccoli can be harvested and eaten any time from when the heads first appear until the time the blooms open. For the maximum yield and quality, wait until the heads are full sized and yet still firm (they start to loosen just prior to blooming). Don't pull out the plants after harvesting the heads. Most types of broccoli will put out a second crop of smaller side shoots after you harvest the central stem.
