When is the right time to harvest peppers from the plant?

You can harvest peppers any time after they reach full size. If you leave them on the bush, most varieties will turn from green to red as they ripen fully. These red fruit have considerably higher levels of some vitamins and are often sweeter. However, if you pick them when full sized, but still green the bush will tend to produce more.
