Tomatoes are moisture sensitive and need a regular supply of water to thrive and produce fruit. In our hot dry conditions, moisture stress can show up as cracking. This doesn't interfere with edibility, however!
How often to water depends on your particular soil's characteristics. Keep soil uniformly moist, but not soaking wet, to a depth of 12-18 inches. You might also want to consider providing afternoon shade for your tomatoes. When selecting tomato varieties, keep in mind that small or medium sized fruits usually ripen and mature with fewer problems than the big beefsteak types. Varieties that mature in fewer days (those with Early in their name, for example) often do better as well. I hope this info helps!
