Processing Green Hazelnuts - Knowledgebase Question

Does one roast or otherwise process hazelnuts, once they have been collected from beneath the tree? The raw nut seems somewhat "green" in taste, not unlike raw peanuts.

Hazelnuts drop when they are ripe. Gather them often to prevent spoiling. They should keep for several months or more in a cool place. No processing is required.

The nuts of European varieties are considered more flavorful than some of the American natives or hybrids of the two.
