The Q&A Archives: Processing Green Hazelnuts

Question: Does one roast or otherwise process hazelnuts, once they have been collected from beneath the tree? The raw nut seems somewhat "green" in taste, not unlike raw peanuts.

Answer: Hazelnuts drop when they are ripe. Gather them often to prevent spoiling. They should keep for several months or more in a cool place. No processing is required.

The nuts of European varieties are considered more flavorful than some of the American natives or hybrids of the two.
