I just planted a weeping cherry tree and a kousa dogwood. Should I put some type of protection around them for winter?

You should make sure they have several inches of organic mulch such as shredded bark covering the area below their branch spread but do not allow it to touch the trunk. Next, you might want to use a cylinder of sturdy wire mesh such as hardware cloth to protect the trunk from rodents. Make sure it extends high enough to deter a rabbit standing on top of snow. During the growing season be sure the wire does not constrict the trunk in any way.
