I have had great success growing paperwhites in stones and water, what other bulbs will grow successfully in the same medium?

I can't think of any other bulbs that are routinely forced quite that way, although hyacinths and crocus can be grown in a special "forcing jar" which has a fat base to hold water and then a narrow neck and wide lip at the top to hold the bulb. Since this works essentially the same way in that the bulb is suspended above the water, you might experiment and see if it works with pebbles. These latter two bulbs do require prechilling, however.
