When are Biker Billy Peppers at the peak of ripeness? I have several plants with peppers in various stages of development. When should they be picked for best flavor and maximum "tang?"

You can harvest the peppers when they've reached mature size (2" at the shoulder and about 3 1/2" long). Green peppers will be milder in flavor than red, but while red is hotter, it's a bit sweeter, too. Of course, whether jalapenos are red or green, they're still very hot! Enjoy!
