Question: When are Biker Billy Peppers at the peak of ripeness? I have several plants with peppers in various stages of development. When should they be picked for best flavor and maximum "tang?"

Answer: You can harvest the peppers when they've reached mature size (2" at the shoulder and about 3 1/2" long). Green peppers will be milder in flavor than red, but while red is hotter, it's a bit sweeter, too. Of course, whether jalapenos are red or green, they're still very hot! Enjoy!
