The Q&A Archives: Curing Black Olives

Question: How do you cure black olives? Toni Redman Orange, CA

Answer: Curing black olives is an involved process taking 12 hours to complete. You'll need lye, salt and all the equipment to use lye safely to remove the tannins in the olives in order for them to be cured properly. Instead of trying to describe the whole process here, I'll refer you to your UCAL Extension Service, which has a pamphlet on curing olives. You can call them at 909-683-2013.
