I grew up in MN, so am aware of the delights of rhubarb. However, it doesn't grow in the low desert because of the summer heat and lack of cold chill hours in winter. You might be at a high enough elevation in Apache County that it will perform for you. Here is a source for 'Valentine' rhubarb plants: Miller Nurseries, www.millernurseries.com or 1-800-836-9630. Their catalog says that it has less acid and is ready for harvest a year sooner than other varieties. Now my mouth is watering for a piece of my mom's rhubarb pie.
