Some of the flowers are done blooming while others are just opening, should I take the spent blooms off or wait until they have all bloomed & cut the stalk?

In my opinion, it looks nicer if you remove the individual flowers as they fade and then finally remove the stalk by cutting it at the base. I'm a bit surprised that they are not all open at once, however. Make sure that you are keeping the soil slightly moist (not sopping wet) and that the plant is away from drafts such as a heating vent. Cooler temperatures will also help the flowers last longer, one way to do that is to set it down on the floor at night -- it's often at least a few degrees cooler than than on the table.
