I know that bean plants (green beans) grow very quickly. How long does it normally take them to reach their maximum height and how tall do they actually get?

The answer to your question depends on what variety you are growing. Bush beans might be knee high, but some types of pole beans can reach twelve feet. They will cascade or drape a bit on a shorter trellis. Bush beans normally grow to size and begin to bear in about 55 days, pole beans anywhere from two to three months.
