Question: When and how are leeks to be harvested?

Answer: Leeks take about 100 days to reach maturity. Harvest when the stalks have thickened and after a few cool nights. They often have a slightly sweeter flavor after some chill. You can harvest whenever they reach the size you want--just pull them out of the ground, as you would an onion. Good luck!
