I need to protect the barn from wood eating horses. What can I plant around it that they won't eat? The area gets morning sun and has water to the area.

You pose an interesting question. I'm not sure that horses won't dine on rosa rugosa, but it won't hurt them if they do. Other possibilities include fast-growing hops (Dodonaea viscosa), barberry, or bottlebrush (Callistemon).
