I am growing paperwhites for the first time. Once the flowers die what should I do? Can I store them and replant them? What are the bumps at the end of the stalk where the flowers branch off?

Unfortunately, paperwhites are usually so exhausted by the forcing process that they won't bloom again. In any case they are not winter hardy so it is best to throw them away. The bumps are where seeds would form.
