My artichoke plants produce plenty of artichokes but they are tough. Can you give any recommendations?

If your plants are being watered regularly while the chokes are forming, I wonder if you're harvesting them a little too early or a tad too late. Artichokes are actually thistle-like flowers. In maturity the outer sepals spread to reveal spectacular purple blooms. For best taste, harvest when the buds are fully formed and the sepals just begin to spread. If you harvest too early or too late, the quality will be poor.
