Are the tiny ears of corn that are often in Chinese food really corn? Do they grow like ordinary ears of corn?

The baby corn is real corn, it's just harvested while it's immature. If you'd like to grow your own baby corn, simply plant your sweet corn seeds about 6" apart and harvest the 3" ears within 5 days of the appearance of silks.
