I want to know if rabbits and other small animals will eat my squash plants, if I plant them outside of a fenced area.

In my experience, the answer is "probably" although I am not sure I would blame rabbits specifically. Woodchucks and deer are good contenders, too, as well as who knows what else -- hungry critters always seem to find gardens a special treat..
