Harvesting Bay Leaves - Knowledgebase Question

Could you please tell me how to harvest bay leaves? I have a bay leaf tree and I need to know if I pick the leaves all at once, a few at a time, from the lower half of the tree, etc. Do I then dry them naturally or can I use a dehydrator?

I assume you are referring to Laurus nobilis. Leaves are usually picked in summer. They dry readily naturally because there's not that much moisture in the leaf, but you could experiment with the dehyrator to see if that works better for you. They lose their flavor after about a year, so harvest only as many as you can use. Pick younger, fresher growth. Enjoy!
