I would like to know if white asparagus is a different species from the ordinary green asparagus. |
White asparagus is not a special variety; it is just grown differently to blanch the stalks. Before spears emerge in spring, the soil is mounded over the bed to a depth of about 8 inches. When the tips of the spears emerge, the spear is cut off at the base by pushing a long knife down into the soil. Since the soil blocked light, no cholorphyll develops in the lower part of the stalk.
