Question: What tomato seeds should I purchase for drying in my dehydrator? One book rcommends the "San Marzano and other firm full-flavored varieties.... thick walled with a high acid content." Do you have anything that would fit the bill?

Answer: If you plan on dehydrating tomatoes, it stands to reason you'll want one that's fleshy rather than juicy. Juicy tomatoes will dry okay, but they'll take a much longer time to do so and you'll end up with a lot less product when it's fully dry.

Roma type tomatoes typically have less juice than other varieties. Burpee's Early Pick and Supersteak Hybrid have solid, meaty textures, and Brandywine is an excellent choice for drying, as well.
