When should I plant lettuce and spinach here in North Carolina? I have seed from Burpee for Classic Meslun mix, Gourmet Blend lettuce, and Baby's Leaf Hybrid spinach.

Lettuce and spinach grow best in cool weather, so you can be planting seeds and transplants well before the last expected frost, even as early as five or six weeks ahead of that date. This will allow you to harvest over a longer season. Save any leftover seed to plant again in the fall, too.
