In seed catalogs I noticed that along with the description of a variety there is a time frame (e.g. 73 days or 61 days). What time frame does this refer to?

That is the days from planting the seed to harvesting the crop. Keep in mind that it is an average and will be affected by growing conditions, especially temperatures. Nevertheless it is useful in comparing varieties and for general planning purposes.
